Pistachios are one of the oldest nut dating back to 6000 BC and believed to have originated in the mountain ranges of West-Asia and Turkey region. The pistachio plant is a hardy desert plant (tolerant to a wide range of temperatures and even saline soil) and is now cultivated all over the world.
Qualities: the pistachios is one of the few nuts that contain most of the nutrients required by humans for complete health such as carbohydrates, proteins, fats, dietary fiber, phosphorus, potassium, thiamine, vitamin B-6, beta-carotene, lutein and zeaxanthin, calcium, iron, magnesium, zinc, copper, manganese, riboflavin, niacin, pantothenic acid, folate, and vitamins E, C, A, and K. Pistachios have one of the highest protein content compared to other nuts.
Some of the health benefits attributed to the regular consumption of pistachios include:
- cardiovascular support attributed to being a very good source for mono-unsaturated fatty acids such as oleic acid and antioxidants which help strengthen blood vessels and may correct cholesterol levels.
- reduced risk of age-related macular disease (AMD) due to high levels of carotenoid antioxidants such as lutein and zeaxanthin
- digestive support (30 grams contain about 3 grams of dietary fiber) and may diminish diarrhea for those suffering from Crohn's disease
- immune support related to the high content of various antioxidants that may protect the cells from the damaging oxidation of free radicals
- reducing anemia by helping the absorption of iron due to its high copper content
- found in topical products as a carrier oil to treat dry skin conditions
- aphrodisiac properties believed to enhance sexual vitality in men
Common use: with their gorgeous green color, high nutrient density, and delicious sweet taste, these creamy kernels are fantastic just straight out of their shell or sprinkled on salads, soups, cereals, sundaes, fresh fruit, or in pesto and hummus, ice creams, raw cakes ….the culinary versatility is endless. It is well known as the feature ingredient in Baklava, a popular pastry enjoyed in the Middle East and pistachio oil is considered one of the healthiest cooking oils.
Pistachio Chocolate Bark Recipe: gently melt coconut oil and combine with sweetener, salt, cinnamon, pistachios and nut butter and stir well. Add cacao powder and mix with a spoon until well combined. Spread chocolate in a container lined with parchment paper to make a thin layer and garnish with more pistachio pieces, edible flowers, cacao nibs….place in the fridge (or freezer) for at least 1 or 2 hours. Enjoy!
1 cup organic virgin coconut oil
2/3 cup organic cacao powder
1 heaping Tbsp organic cashew butter or organic almond butter
1//4 cup crushed raw organic pistachios
1-2 Tbsp Xylitol (or favorite other sweetener)
1 pinch organic cinnamon powder
1 pinch fine ground Himalayan sea salt
Storage: keeps well in a sealed container in a cool, dry, and dark location
