Add a bold, traditional umami depth to your cooking with Miso Master® Premium Traditional Red Miso. This classic red miso is crafted from whole soybeans, rice koji, sea salt, and water. Due to the high soybean content relative to the rice koji, this variety requires a careful aging period to develop its signature rich, deep flavour.

Each batch is naturally aged for 12 months through four full seasons without temperature control. This deliberate aging process takes place in four-ton, hand-crafted Cypress, Redwood, or Fir barrels, ensuring thorough fermentation and flavor development. Red miso has a deep umami flavor that is ideal for balancing complex dishes and has been a staple ingredient in the Japanese diet for thousands of years. It is wonderfully suited for creating robust soups, rich braises, sauces, marinades, and glazes.
