Production: pearled (or dehulled) barley has the outermost husk and bran layers removed to reduce cooking time without significantly compromising nutrient content.
Barley is a member of the grass family and, in its wild form, originates from the grasslands and woodlands throughout the Fertile Crescent area of Western Asia and northeast Africa
Qualities: by some considered a real "super food", barley is a high protein and low glycemic grain, rich in both soluble and insoluble fiber, as well as many Vitamins and many minerals such as Potassium, Iron, Calcium, Selenium, Phosphorus, Copper, and Manganese. Soluble, beta glucan-rich, prebiotic fiber helps the body metabolize fats and carbohydrates and has been found to lower bad (LDL) blood cholesterol levels. Insoluble fiber commonly called roughage promotes a healthy digestive tract and may reduce the risk of cancers affecting it.
Common use: the chewy texture and nutty taste of pearled barley make it an excellent choice in breakfast cereals, soups, stews, or as a rice substitute in risotto.To cook, bring 1 cup (soaked or unsoaked) barley and 2 1/2 cups water or broth to a boil. Reduce heat to a simmer; cook, covered, until tender and most of the liquid has been absorbed, 40 to 50 minutes. Let stand 5 minutes. Makes 3-3 1/2 cups.
Storage: keeps well in a sealed container in a cool, dry, and dark location

Excellent product
I've used this barley for stews and soups. Just throw a few handfuls in and wait for the magic to happen!Beef barley stew is one of the best cold weather foods, in my opinion. Really sticks to your ribs.Also, Organic Matters is an excellent group of people to deal with. They fill orders quickly and accurately and local shipping prices are very reasonable. I'm pleased with their products and service and look forward to making my next order!
